Avocado Shrimp Cocktail

Ingredients

  • 1 lb cooked and peeled medium shrimp, chilled
  • juice of 1 large lemon
  • 1 tbsp prepared horseradish
  • 1 dash Tabasco (optional)
  • 1/4 cup BPA-free tomato sauce
  • 2 large avocados, diced
  • sea salt and black pepper, to taste

Instructions

  • Add shrimp, lemon juice, horseradish, Tabasco, and tomato sauce to a medium non-reactive mixing bowl. Stir until well combined. Cover and chill until ready to serve.
  • Just before serving, stir in avocados, salt, and pepper. Enjoy with your favorite sides.
