Lime-Roasted Chicken

This lime-roasted chicken is juicy, zesty, and packed with bold citrus flavor. Roasted to golden perfection with fresh lime, it’s a simple yet vibrant dish that’s perfect for weeknight dinners or weekend gatherings.

Ingredients

  • 1 whole chicken, 5 to 7 pounds (giblets removed)
  • 1 tbsp avocado oil
  • sea salt and black pepper to taste
  • 2 limes, sliced

Instructions

  • Preheat the oven to 400°F. 
  • Wash the chicken and place it in a baking pan and dry with paper towel.
  • Coat the chicken with avocado oil and season with salt and pepper. 
  • Place lime slices inside the cavity and around the chicken.
  • Place in the oven and cook for 45 minutes to 1 hour.
  • Check for doneness by slicing between the thigh and wing. If the meat is still pink, cook for an additional 5 to 10 minutes and recheck.
