Cranberry Apple Sweet Potato Hash

Ingredients
- tbsp coconut oil
- 1 onion, chopped
- 1 large sweet potato, chopped into bite-sized pieces
- 1 large apple, cored and chopped
- 1 cup chopped purple cabbage
- 1/4 cup water
- 1/4 cup dried cranberries
- 1 tsp dried thyme
- sea salt, to taste
- black pepper, to tast
Instructions
- SAUTÉ HASH. Add coconut oil to a large sauté pan over medium heat. When the oil has melted, add onion, chopped sweet potato, and apple. Sauté for about 5 minutes until ingredients start to brown. Then mix in the cabbage and add water to the pan. Cover and allow mixture to steam for 3 to 5 minutes until soft. SEASON HASH. Remove the cover and season with dried cranberries, thyme, sea salt, and black pepper. Mix well and serve warm.
