Cranberry Apple Sweet Potato Hash

Ingredients

  • tbsp coconut oil
  • 1 onion, chopped
  • 1 large sweet potato, chopped into bite-sized pieces
  • 1 large apple, cored and chopped
  • 1 cup chopped purple cabbage
  • 1/4 cup water
  • 1/4 cup dried cranberries
  • 1 tsp dried thyme
  • sea salt, to taste
  • black pepper, to tast

Instructions

  • SAUTÉ HASH. Add coconut oil to a large sauté pan over medium heat. When the oil has melted, add onion, chopped sweet potato, and apple. Sauté for about 5 minutes until ingredients start to brown. Then mix in the cabbage and add water to the pan. Cover and allow mixture to steam for 3 to 5 minutes until soft. 
    SEASON HASH. Remove the cover and season with dried cranberries, thyme, sea salt, and black pepper. Mix well and serve warm.
